Baked zucchini fritters with bell pepper are not fried in a pan but baked in a muffin tin. Grated zucchini, which does not need to be squeezed, is mixed with eggs, diced red bell pepper, grated cheese, flour and baking powder. The mixture is divided among the greased cups of the tin and baked for 25 minutes at 200 °C (400 °F). Zucchini has a mild flavor, so it pairs well with a stronger cheese and seasoning. The recipe makes four servings.

Instructions
Tip: tap a step to mark it as done.
Grate the zucchini but do not squeeze it. Whisk the eggs with salt and pepper and stir in the zucchini, diced bell pepper and grated cheese.
Add the flour and baking powder, mix again and divide the mixture among the greased cups of a muffin tin.
Bake at 200 °C (400 °F) for 25 minutes.
Tip: Fill the cups about three quarters full, since dough with baking powder rises in the oven. Leave the baked fritters in the tin for 5 minutes, then loosen them with a knife around the edge.
