These yeast-raised ricotta and chocolate doughnuts are baked instead of fried in oil, so they aren't greasy. Along with butter, eggs, and milk, the dough includes ricotta (which you can replace with quark, a fresh curd cheese, or a creamy dairy spread) and orange zest. Chocolate chips are added after the dough rises. Let the cut-out rounds rise again before baking for 20–25 minutes at 180°C (350°F). Finish with a dusting of powdered sugar.

Instructions

Tip: tap a step to mark it as done.

  1. Place the flour in a bowl and add the eggs, butter cut into small pieces, sugar, orange zest, and ricotta. You can substitute quark, a fresh curd cheese, or a creamy dairy spread for the ricotta. Dissolve the yeast in the warm milk with 1 tsp sugar. After about 15 minutes, add it to the other ingredients and knead into a smooth dough.

  2. Cover the dough with a kitchen towel and let it rise in a warm place. The longer it rises, the fluffier it will be. Work the chocolate chips into the risen dough, then roll it out on a floured surface to a thickness of 1 cm and cut out rounds.

Let the rounds rise again while the oven preheats; you can leave them for as long as an hour.

  3. Bake in a preheated oven at 180°C (350°F) for about 20–25 minutes, until golden brown and nicely puffed. Unlike fried doughnuts, these won't be greasy.

Tip: Brush the doughnuts with melted butter as soon as they come out of the oven to keep them soft and help the powdered sugar stick.
