Banana bread is a moist loaf cake made with overripe bananas, baked in a loaf pan and sliced like bread. Mash three brown-spotted bananas with a fork, then use a wooden spoon to stir in melted butter, sugar, an egg, and all-purpose flour with baking soda—there is no kneading or beating. Bake for an hour at 175 °C (350 °F) for about 10 slices.

Serve for breakfast or with coffee.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the pan

Preheat the oven to 175 °C (350 °F). Grease a loaf pan measuring about 25 × 11 cm with butter and dust with flour, or line it with parchment paper.

  2. Mash the bananas

Peel the bananas and mash them in a bowl with a fork. A few small lumps are fine.

  3. Add the butter, sugar, and egg

Stir the melted, lukewarm butter, granulated sugar, vanilla sugar, and egg into the bananas.

  4. Stir in the flour

Sprinkle the baking soda, cinnamon, and salt over the mashed banana mixture and stir to combine. Add the flour and stir with a wooden spoon just until no dry flour remains—overmixing will make the bread tough.

  5. Bake

    1 hr

Pour the batter into the pan, smooth the top, and bake for 55–60 minutes, until a skewer inserted into the center comes out dry. If the top browns too quickly, cover it with aluminum foil after 40 minutes.

  6. Let cool

    10 min

Let the bread cool in the pan for 10 minutes, then turn it out onto a wire rack. Slice while lukewarm or once completely cool.

Tip: Bananas with brown to black skins work best—they are sweeter and easy to mash. At the end, you can stir 80 g of chopped walnuts or chocolate chunks into the batter. Read more: Spotted bananas: how they differ from unripe ones
