Chicken salad with egg crepes and yogurt is a filling dish that works well for dinner. Cook the cut-up chicken in a skillet, then make thin crepes from beaten, seasoned eggs and cut them into strips. Toss everything with onion and plain yogurt, which you can replace with mayonnaise or flavor with garlic. Cucumber or corn also works well in this salad.

Instructions
Tip: tap a step to mark it as done.
Cut up the chicken breasts and pan-sear them in a skillet. Chop the onion into small pieces and, depending on your preference, add it to the salad raw or cook it with the chicken.
Beat the eggs in a bowl, season with salt and pepper, and add herbs to taste. Pour the mixture into the skillet in batches and cook into thin crepes as usual.
Stack the crepes and cut them into strips. Toss everything together and add the plain yogurt or mayonnaise. If desired, add garlic to the yogurt.
Tip: Add cucumbers, corn, or another favorite ingredient to the salad if desired.
Tip: Cook the egg crepes over low heat so they do not brown or become rubbery. Let both the chicken and the crepe strips cool before mixing them with the yogurt, since warm ingredients would thin it out.
