This oatmeal bundt cake with applesauce is made without flour or sugar and is sweetened with honey. Simply blend the oats into a fine flour and mix with eggs, yogurt, olive oil, and cinnamon. The yogurt keeps the cake moist, while the applesauce adds a delicate fruity flavor. Bake at 150°C (300°F) for about 50 minutes to make approximately 12 servings. Before serving, you can dust it with powdered sugar or spread it with jam.

Ingredients

Small pieces of your favorite dried fruit or nuts (raisins, almonds, hazelnuts, or cranberries recommended)

    Instructions

Tip: tap a step to mark it as done.

    1. Allow 70 minutes total preparation time.

Preheat the oven to 150°C (300°F).

    2. Blend the rolled oats into flour; using crushed oats makes this easier. Combine them with the remaining ingredients in a bowl in 2 stages: first mix the dry ingredients, then add the wet ingredients.

Grease a bundt pan with butter, or use any other baking pan.

    3. Place the pan in the preheated oven and bake for 50–55 minutes, until golden brown. Let the cake cool in the pan for 5 minutes before turning it out.

Once the cake has cooled, dust it with powdered sugar or spread it with jam before serving, if desired.

Tip: Blend the oats until they are as fine as flour to keep the cake from crumbling. You can replace the olive oil with sunflower oil if you find its strong flavor distracting in sweet baked goods.
