Applesauce with cinnamon and star anise is a sweet fruit puree reminiscent of baby food. Peeled apples are simmered with a little water and star anise until soft, then blended and flavored with sugar, vanilla sugar, cinnamon, and lemon juice. Eat the applesauce right away, or fill jars while it is still hot and process in boiling water for 15–20 minutes. It also works well as a filling for cakes and pastries.

Instructions
Tip: tap a step to mark it as done.
Wash, peel, and core the apples, then cut them into small pieces.
Place the apples and star anise in a pot, add a little water, and simmer until soft. Remove the star anise and puree the apples with an immersion blender.
Sweeten the applesauce with the granulated sugar and vanilla sugar, then add ground cinnamon and lemon juice to taste. Eat the finished applesauce right away, or fill small canning jars while it is still hot and process in boiling water: 15 minutes for 0.5 l jars and 20 minutes for 1 l jars. At elevations above 300 m, process for 5 minutes longer, as specified for applesauce by the U.S. National Center for Home Food Preservation (NCHFP).
Tip: Keep the blade assembly of the immersion blender fully submerged before turning it on to prevent hot applesauce from splattering.
