This fluffy apple cake with cinnamon and nutmeg is filled with juicy apple pieces. The peeled apples are cut up and coated with a little flour, cinnamon, and nutmeg to keep them from sinking to the bottom of the batter. The batter is made with eggs beaten with sugar, butter, semi-coarse wheat flour, and lemon zest.
The cake bakes slowly, for about an hour at 180°C (350°F), so allow plenty of time to make it.

Instructions
Tip: tap a step to mark it as done.
Peel and core the apples, then cut them into medium pieces or thin slices.
Lightly dust the apples with some of the flour, add the cinnamon and nutmeg, and toss well.
In a deep bowl, beat the sugar and eggs with an electric mixer.
When the mixture becomes pale, add the lemon zest, melted butter, and flour, then beat again until combined.
Grease a baking pan with vegetable or coconut oil and pour in a little of the batter.
Arrange a layer of apples over the batter, then cover with more batter. Continue alternating layers until the pan is full, finishing with batter on top.
Bake the cake at 180°C (350°F) for 1 hour.
Tip: Let the melted butter cool until lukewarm, then pour it in a thin stream with the mixer on low speed to keep the beaten egg mixture from deflating.
