This apple cinnamon protein mug cake is a cake for one made with oat flour, egg, and vanilla protein powder, baked right in a large mug in the microwave. Grated apple keeps it moist and, together with the cinnamon, makes it smell like apple strudel. Unlike a chocolate banana mug cake, it contains protein powder instead of flour and chocolate.

Based on the ingredients, one mug contains approximately 30 g of protein and 360 kcal.

Instructions

Tip: tap a step to mark it as done.

  1. Grate the apple

    2 min

Coarsely grate the apple with the skin on. Set aside a tablespoon of grated apple for the topping.

  2. Mix the batter

    3 min

In a large mug that holds at least 350 ml, whisk the egg, milk, and honey with a fork. Add the oat flour, protein powder, baking powder, and cinnamon, and stir until the batter is free of lumps. Fold in the grated apple and spoon the reserved apple on top.

  3. Microwave the cake

    2 min

Microwave at 800 W for 90 seconds to 2 minutes, until the cake rises and the top is dry.

  4. Let stand

    1 min

Let stand for 1 minute to finish cooking in the residual heat. Serve warm in the mug with a spoonful of Greek yogurt and a pinch of cinnamon.

Tip: Microwave it only until the top is dry but still springy, as it can quickly become tough in the microwave. Use a mug that holds at least 350 ml, as the batter rises during cooking. Read more: How to adjust a recipe for your baking pan
