Savory yogurt pancakes with scallions are hearty, pan-fried pancakes without a sweet filling. Warm yogurt is mixed with baking soda, flour, finely chopped scallions, and eggs to make a thick batter. The pancakes are fried in hot oil on both sides. Preparation takes about 10 to 20 minutes, and the recipe serves four.

Instructions

Tip: tap a step to mark it as done.

  1. Warm the yogurt, for example by microwaving it for 1 minute, and stir in the baking soda. Let stand for 5 minutes.

  2. Finely chop the scallions and hard-boiled eggs. Mix the yogurt with the flour, raw eggs, scallions, and chopped hard-boiled eggs to make a thick batter. Heat oil in a skillet.

  3. Drop the batter into the skillet by the teaspoonful and spread each mound into a thin pancake. Fry on both sides. Serve with garlic dip, sour cream, or dill.

Tip: Use the whole scallion, including the green tops, but chop the white part more finely so it doesn't stay firm in the thin pancakes. Flip each pancake when bubbles begin to form on the surface.
