Zucchini cheese bread is a savory quick bread made with grated zucchini, Edam, eggs, and yogurt in a loaf pan. Salt and squeeze the zucchini first to keep the center from turning soggy. The cheese and chives add enough flavor that it needs no spread.
Cut it into 12 slices for a school snack or to serve with soup. Unlike gluten-free zucchini bread with poppy seeds, this loaf is savory and made with cheese.

Instructions

Squeeze the zucchini
15 minWash the zucchini, trim the ends, and coarsely grate it without peeling. Toss with half the salt and let stand for 10 minutes. Squeeze thoroughly by the handful or in a clean kitchen towel, then discard the liquid.
Prepare the pan
5 minPreheat the oven to 180°C (350°F), using conventional (top and bottom heat). Grease a loaf pan about 25 cm long with oil and dust with flour, or line it with parchment paper.
Mix the batter
5 minWhisk the eggs with the yogurt, oil, remaining salt, and black pepper. Add the squeezed zucchini, 100 g grated cheese, and chives. Mix the flour with the baking powder, add to the other ingredients, and stir just until combined.
Bake
55 minTransfer the batter to the pan, smooth the top, and sprinkle with the remaining 20 g cheese and the sunflower seeds. Bake for 50–55 minutes at 180°C (350°F), until a skewer inserted into the center comes out dry. If the top browns too quickly, cover it with aluminum foil after 35 minutes.
Let cool
30 minLet the bread cool in the pan for 15 minutes, then transfer it to a wire rack and let cool for another 15 minutes. Slice when lukewarm or cold; it will crumble if sliced hot.
Tip: Squeeze the zucchini thoroughly; wet zucchini will make the center of the bread gummy. You can substitute smoked cheese or Niva, a Slovak blue cheese, for the Edam; if you do, add only a pinch of salt to the batter.
