This gingerbread cake is made with strong black tea instead of milk, with sugar, honey, and plum butter (thick plum jam) dissolved in the tea. Egg and oil are stirred into the lukewarm mixture, then combined with flour, cocoa powder, gingerbread leavening powder, and baking soda. The batter is poured into a baking pan and baked for about half an hour. The cake is dark and moist and keeps for several days.

Dry ingredients
In a bowl, mix the flour with the cocoa powder, gingerbread leavening powder, and baking soda.
Tea
Brew strong black tea and dissolve the sugar, honey, and plum butter in it while it is warm. Let the mixture cool until lukewarm, then add the egg and oil and mix thoroughly.
Batter
Pour the liquid mixture into the flour mixture and stir until you have a smooth, fairly thick batter. Pour it into a greased and floured baking pan measuring about 25 × 35 cm and smooth the top.
Bake
Bake in an oven preheated to 180 °C (350 °F) for 25–35 minutes, until a skewer inserted into the center comes out dry. Let cool, then cut into squares.
Tip: Mix the batter only until the ingredients are combined. Wrapped in plastic wrap, the cake will be even more moist the next day.
