Haystack pork patties with potatoes, eggs and cheese are baked ground pork patties topped with a mound of filling. Their name refers to their haystack shape. The filling combines coarsely shredded raw potatoes, mayonnaise and finely chopped hard-boiled eggs, with onion, shredded cheese and a little more mayonnaise on top. Bake the patties for 30 to 35 minutes at 180°C (350°F) for a lunch or dinner for a family of four.

Instructions
Tip: tap a step to mark it as done.
- First, prepare the filling: coarsely shred the potatoes and mix with salt and mayonnaise. Hard-boil the eggs, chop finely and add to the mixture.
- Shape the ground pork into patties 10 cm in diameter and arrange on a baking sheet lined with parchment paper.
- Top the patties generously with the potato filling, sprinkle with chopped onion and shredded cheese, and spread a little more mayonnaise on top.
- Bake at 180°C (350°F) for 30–35 minutes and serve hot.
Tip: Shape the patties a little wider and thinner than you want them to be when cooked—the meat shrinks during baking, which could cause the mound of potato filling to slide off.
