These mango-quark popsicles with yogurt and lemon are homemade frozen treats with two colorful layers. The bottom layer is a smooth mixture of quark (soft curd cheese), plain yogurt, sugar, and vanilla; the top layer is a thick mango puree with lemon juice. Fill the molds and freeze for at least three hours.
If your molds do not have sticks built into the lids, insert wooden popsicle sticks after half an hour of freezing.

Instructions
Tip: tap a step to mark it as done.
Mix the quark, yogurt, half the sugar, and vanilla extract in a bowl until smooth. Fill the popsicle molds about halfway with the mixture.
Blend the mango with the lemon juice, remaining sugar, and a little water to make a thick puree. Use it to fill the molds the rest of the way. Close the molds and freeze for at least 3 hours.
Tip: Choose a ripe, fragrant mango, since freezing dulls the flavor and an unripe mango would make the popsicles sour. Dip the molds in warm water for a few seconds before unmolding so the popsicles release without breaking.
