These milk- and egg-free crepes are made with all-purpose flour, boiled and cooled water, sugar, salt, and vegetable oil. A pinch of baking powder makes them light, and the oil in the batter helps keep them from sticking to the pan. For best results, use a mixer to beat the batter until creamy, then let it rest for 20–25 minutes. Cook the crepes as usual; they are also suitable for people who cannot eat milk or eggs.

Instructions

Tip: tap a step to mark it as done.

  1. Bring the water to a boil and let it cool. In a bowl, combine the flour, salt, baking powder, and sugar, then gradually pour in the cooled water.

  2. For best results, beat the batter with a mixer until creamy. Finally, mix in the oil thoroughly and let the batter rest for about 20–25 minutes. Then cook the crepes in a pan as usual.

Tip: The egg-free batter will thicken slightly as it rests; if it does not spread easily in the pan, thin it with a tablespoon of boiled water. Slide a spatula under each crepe only once it releases from the bottom of the pan on its own.
