Savory Christmas cheese cookies are tender, buttery cookies with grated cheese and caraway that you cut out just like Linzer cookies, but without sugar. Simply chill the dough for 30 minutes, roll it out, and cut out stars or hearts. Brushed with egg and sprinkled with sesame seeds, they bake in about 13 minutes. Unlike savory puff pastry snacks, these are made with homemade dough and keep in an airtight container for about 2 weeks, so you can bake them ahead.

Instructions

Tip: tap a step to mark it as done.

  1. Make the dough

    10 min

Mix the flour with the salt and ground caraway. Add the cold, cubed butter, cheese, egg yolk, and sour cream, and quickly work into a smooth dough. Avoid kneading for too long so the cookies stay tender.

  2. Chill

    30 min

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

  3. Cut out the cookies

    20 min

Preheat the oven to 180 °C (350 °F) and line baking sheets with parchment paper. Roll the dough out to about 4 mm thick and cut out stars or hearts about 4 cm across. Brush with beaten egg and sprinkle with sesame and caraway seeds.

  4. Bake

    30 min

Bake one sheet at a time at 180 °C (350 °F) for 12–15 minutes, until golden. Let the cookies cool on a wire rack, then store in an airtight container.

Tip: Grate the cheese finely; coarse pieces would melt out of the thin dough and burn around the edges. Edam, Parmesan, or a mixture of the two works well.
