These ham and egg cups are eggs baked in ham-lined muffin cups. Place a slice of ham in each cup, crack an egg into it, season with salt and pepper, and bake for about 20 minutes.

Adjust the number to suit how many people are having breakfast; each cup takes one egg and one slice of ham.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the muffin pan

Line the muffin cups with slices of ham to form little baskets. If using a metal pan, brush it with oil first; a silicone pan does not need greasing.

  2. Add the eggs

Crack one egg into each ham cup and season with salt and pepper to taste.

  3. Bake

Bake for about 20 minutes at 180–200°C (350–400°F).

Tip: Add a little vegetables, bacon, or cheese to the cups if desired.

Tip: Choose wide slices of ham that completely line each muffin cup and extend slightly above the rim; otherwise, the egg will leak underneath the ham and stick to the pan.
