Sun-dried tomato and quark spread is a bold pink-orange spread made with 100 g oil-packed sun-dried tomatoes and 250 g quark (a fresh farmer's cheese), flavored with oregano and a little garlic. The sun-dried tomatoes and oregano give it a pizza-like aroma, while the quark mellows the flavor.
It takes 5 minutes to blend, then thickens in the refrigerator. One batch makes enough for about 12 slices of bread. There is no need for salt, since the tomatoes are salty enough. It keeps in a sealed container in the refrigerator for 3 days.

Instructions
Tip: tap a step to mark it as done.
Prepare the tomatoes
5 minDrain the sun-dried tomatoes in a strainer, reserving 1 tbsp of the oil. Chop any larger pieces to make them easier to blend. Peel the garlic.
Blend
5 minUse an immersion blender to blend the tomatoes, garlic, and oil into a coarse paste. Add the quark and oregano and blend until smooth. Taste and season with pepper; salt is usually unnecessary.
Chill
15 minCover the spread and refrigerate for 15 minutes to let it thicken and the flavors come together.
Serve
Spread on bread, rolls, or crusty bread. Store in a sealed container in the refrigerator and use within 3 days.
Tip: If using dry-packed sun-dried tomatoes, soak them in hot water for 15 minutes first and pat dry; otherwise, they will stay tough. For a packed snack, pack the spread separately and spread it on the bread just before eating.
