This deep green frozen spinach spread combines 250 g leaf spinach, 100 g Balkan cheese (a white brined cheese), and 150 g quark (farmer's cheese) with a little garlic and a pinch of nutmeg. Squeeze the thawed spinach thoroughly in a kitchen towel; otherwise, the spread will be watery.

The Balkan cheese provides the saltiness, so no salt is added. This batch spreads onto about 12 slices of bread and keeps in an airtight container in the refrigerator for 2 days.

Instructions

Tip: tap a step to mark it as done.

  1. Thaw the spinach

    5 min

Thaw the spinach in a saucepan over low heat with 1 tbsp water until it separates. Drain and let cool briefly.

  2. Squeeze dry

    5 min

Place the lukewarm spinach in a clean kitchen towel and squeeze thoroughly until it stops dripping. The 250 g will reduce to about a handful; this is normal.

  3. Blend

    5 min

Blend the spinach, Balkan cheese, quark, peeled garlic, and nutmeg with an immersion blender until smooth. Season with pepper and taste; salt is usually unnecessary.

  4. Chill

    15 min

Cover the spread and refrigerate for 15 minutes to let it thicken and allow the flavors to blend.

  5. Serve

Spread onto dark bread or bread rolls. Store in an airtight container in the refrigerator and use within 2 days.

Tip: You can substitute feta for Balkan cheese, though it is slightly saltier; avoid frozen spinach purée, which is difficult to squeeze dry and would make the spread too thin. If packing it for a snack, put the spread in a separate container.
