Coca-Cola cake is a layered cocoa sponge cake with a walnut filling flavored with cola and rum. The filling combines butter beaten with cane sugar, ground walnuts and BeBe biscuits (plain butter cookies), with Coca-Cola and rum mixed in. The sponge bakes for only about 15 minutes at 180 °C (350 °F), then is topped with stabilized whipped cream, grated chocolate and chopped nuts. Serve a slice with afternoon coffee.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the egg yolks with the sugar until pale and fluffy. Gradually add the hot water, flour mixed with baking powder, and cocoa powder. Finally, gently fold in the beaten egg whites.

  2. Line a 30 × 27 cm baking pan with parchment paper, or grease and flour it. Pour in the batter and bake in a preheated oven at 180 °C (350 °F) for about 15 minutes. Remove the baked cake and let cool.

  3. Prepare the first filling. Beat the butter with the sugar, mix in the ground walnuts and cookies, then pour in the Coca-Cola and rum. Mix until creamy, then spread over the cooled cake.

  4. For the second filling, whip the cream with the vanilla sugar and whipped cream stabilizer until fluffy, then spread over the first layer. Sprinkle the top with chopped walnuts and grated chocolate.

  5. Chill the cake in the refrigerator, then cut into slices and serve.

Tip: If serving the cake to children, omit the rum and replace it with the same amount of cola; for aroma, you can add a few drops of rum flavoring.
