This three-ingredient Japanese cheesecake is made with just eggs, white chocolate, and cream cheese, such as Philadelphia. Melt the chocolate and cream cheese over simmering water, stir in the egg yolks, then fold in stiffly beaten egg whites for a fluffy cake without flour.

It bakes in a water bath in three stages, finishing with 15 minutes in the turned-off oven.

Instructions

Tip: tap a step to mark it as done.

  1. Melt the chocolate and cream cheese

Separate the eggs and refrigerate the whites. Break the chocolate into a saucepan and melt it over simmering water. Add the cream cheese and stir until smooth.

  2. Add the yolks and beaten egg whites

Stir the egg yolks into the chocolate mixture. Beat the egg whites until stiff peaks form, then gently fold them into the mixture in batches.

  3. Prepare the water bath

Pour the batter into a small pan about 15–18 cm in diameter lined with parchment paper. Set the pan in a roasting pan filled with hot water.

  4. Bake

Bake in a preheated oven for about 15 minutes at 170 °C (340 °F), then for 15 minutes at 160 °C (325 °F). Turn off the oven and leave the cake inside to finish cooking for another 15 minutes. Once cool, dust with powdered sugar.

Tip: Do not open the oven during baking, as a sudden rush of cool air could cause this fluffy, flourless cake to collapse. A little sinking as it cools is normal.
