Spaghetti with a sour cream, cheese, and chicken broth sauce makes a quick dinner for four, ready in about 40 minutes. Finely chopped garlic is briefly sautéed in olive oil, then combined with pasta water mixed with sour cream and a pinch of nutmeg, followed by a cup of chicken broth. After a brief simmer, the cooked spaghetti is stirred into the sauce. Top each serving with coarsely grated cheese, black pepper, and herbs.

Instructions
Tip: tap a step to mark it as done.
Bring approximately 5 l of water to a boil in a large pot, allowing about 1 l for every 100 g of spaghetti. Salt the water before it boils, then add the spaghetti and cook according to the package directions, usually 8–10 minutes, stirring occasionally. Drain the spaghetti, reserving approximately 100 ml of the cooking water in the pot for the sauce.
While the spaghetti cooks, heat 2 tbsp of olive oil in a skillet and briefly sauté the finely chopped garlic for about 1 minute. Mix the sour cream and a little nutmeg with half of the reserved pasta water, pour into the skillet, and stir well.
Pour in a cup of chicken broth and the remaining pasta water, stir thoroughly again, and simmer briefly. Finally, stir in the cooked spaghetti and serve.
Season each serving of spaghetti with black pepper and sprinkle with coarsely grated cheese and herbs to taste.
Tip: Mix the sour cream with lukewarm, not boiling, pasta water, then simmer the sauce gently. A vigorous boil could cause the sour cream to curdle.
