Sweet spinach muffins are green muffins made by blending fresh spinach with ripe bananas, eggs, oil, and honey. Spinach gives them their deep green color, while banana dominates the flavor, and they contain no granulated sugar.
Make the liquid portion of the batter in a blender, then simply mix it with the flour for 12 snack-sized muffins. Unlike banana muffins with yogurt, these contain spinach and no yogurt. Following NHS guidance, do not give honey to children under one year old.

Prepare the pan
Preheat the oven to 180 °C (350 °F), conventional (top and bottom heat). Line a 12-cup muffin pan with paper liners.
Blend the spinach and bananas
5 minPlace the washed spinach, peeled bananas broken into pieces, eggs, oil, honey, and vanilla extract in a blender. Blend for about a minute until smooth and uniformly green, with no pieces of spinach leaves remaining.
Mix the batter
5 minIn a bowl, mix the flour, baking powder, baking soda, and salt. Pour in the green mixture and stir with a wooden spoon just until no dry flour remains.
Bake
25 minDivide the batter among the 12 liners, filling each about three-quarters full, and bake for 20–25 minutes at 180 °C (350 °F). The muffins are done when they spring back when touched and a skewer inserted into the center comes out dry.
Let cool
5 minLet the muffins cool in the pan for 5 minutes, then transfer them to a wire rack. The tops will be greenish brown, while the insides will be green when broken open.
Tip: Use fully ripe bananas with brown spots on the peel; they are sweeter and blend more easily. If using frozen spinach, squeeze it thoroughly after thawing, or the batter will be too thin. Read more: Spotted bananas: how they differ from unripe ones
