Carrot muffins with apple and oats are moist whole wheat muffins made with 200 g of very finely grated carrots and one apple. Honey, apple, and raisins provide the sweetness, with no granulated sugar, while cinnamon gives them the aroma of carrot cake.

One pan makes 12 muffins for school snacks or outings. They have no frosting or glaze to smear inside a lunchbox. According to the NHS, honey should not be given to children younger than one year.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the pan

Preheat the oven to 180 °C (350 °F), conventional (top and bottom heat). Line a 12-cup muffin pan with paper liners or grease it with oil.

  2. Grate the carrots and apple

    5 min

Grate the carrots using the finest holes of a grater. Wash and core the apple, then coarsely grate it with the skin on.

  3. Mix the dry ingredients

In a bowl, mix the whole wheat flour, oats except for the reserved 1 tbsp, baking powder, cinnamon, and salt.

  4. Combine the batter

    15 min

In another bowl, beat the eggs with the yogurt, oil, and honey using a fork, then stir in the carrots, apple, and raisins. Add the dry ingredients and stir with a wooden spoon just until no dry flour remains. The batter will be thick; let it stand for 10 minutes so the oats can absorb the liquid.

  5. Bake

    25 min

Spoon the batter into the 12 muffin cups, filling them about three-quarters full, and sprinkle with the reserved oats. Bake for 20–25 minutes at 180 °C (350 °F), until the tops are golden and a skewer inserted into the center comes out dry.

  6. Let cool

    5 min

Let the muffins stand in the pan for 5 minutes, then transfer them to a wire rack. Serve warm or cooled, and let them cool completely before packing them in a lunchbox.

Tip: Grate the carrots very finely, as coarser pieces will stay hard in the muffins. Once cooled, freeze the muffins in a resealable bag and thaw them one at a time.
