These banana yogurt muffins are made with just fork-mashed ripe bananas, plain yogurt, whole wheat flour, raisins, and baking soda. No sugar or fat is added to the batter; the bananas and raisins provide the sweetness.
The batter should be a little thicker than pancake batter.

Make the batter
Mash the bananas with a fork, then add the yogurt and raisins. Mix the flour with the baking soda and add to the banana mixture. Stir to make a batter a little thicker than pancake batter, adding more flour as needed.
Bake
Divide the batter among muffin cups and bake at 180–200 °C (350–400 °F) for about 40 minutes, until a skewer inserted into the center comes out dry.

Tip: Bananas provide most of the sweetness in this batter with no added sugar, so choose very overripe ones with brown-speckled skins. Let the baked muffins cool in the pans for a little while, as they are difficult to remove while warm.
