Banana protein waffles are made with ground rolled oats, a ripe banana, eggs, low-fat quark (a soft fresh cheese), and vanilla protein powder, then cooked in a waffle maker. Everything is blended together, and the banana sweetens the batter without added sugar or wheat flour. Compared with homemade milk and butter waffles, these are softer inside, with crispness mainly around the edges. Serve them with skyr, a thick Icelandic cultured dairy product, blueberries, and banana slices.
Based on calculations from the ingredients, a serving of two waffles contains approximately 41 g of protein and 480 calories.

Instructions
Tip: tap a step to mark it as done.
Grind the oats
2 minGrind the rolled oats into a fine flour in a blender.
Blend the batter
3 minSlice the banana into rounds and set aside 6 slices for serving. Add the remaining banana, eggs, quark, protein powder, milk, baking powder, and salt to the oats and blend until the batter is smooth and thick. Let rest for 5 minutes.
Cook the waffles
20 minPreheat the waffle maker and brush lightly with oil. Pour in a quarter of the batter, close the lid, and cook for 4–5 minutes, until the waffle is golden and steam stops escaping. Place the cooked waffles side by side on a wire rack so they don't get soggy. Repeat to make 4 waffles.
Serve
2 minPlace two warm waffles on each plate and serve with the skyr, blueberries, and reserved banana slices.
Tip: Let the batter rest for 5 minutes so the oats can absorb moisture and the waffles won't break when removed. Open the waffle maker only once steam stops escaping. Read more: Spotted bananas: how they differ from unripe ones
