These baked granola bars combine rolled oats, sunflower and pumpkin seeds, and dried apricots, held together with mashed banana, grated apple, egg, and honey. Bake the mixture in a pan, let it cool and firm up, then cut it into 12 bars with crisp edges and soft centers.

They contain no nuts, making them suitable for places where nuts are not allowed at snack time. Unlike no-bake energy bars and granola, they are cut from a single baked slab.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the pan

Preheat the oven to 180 °C (350 °F), conventional (top and bottom heat). Line a 20 × 20 cm square baking pan with parchment paper, leaving an overhang on two sides so you can easily lift out the baked slab.

  2. Mix the dry ingredients

    5 min

In a bowl, stir together the rolled oats, sunflower and pumpkin seeds, finely chopped apricots, cinnamon, and salt.

  3. Prepare the banana and apple

    5 min

Mash the banana with a fork and finely grate the unpeeled apple. Mix them with the egg, honey, and melted, slightly cooled butter.

  4. Press into the pan

    5 min

Pour the wet mixture into the oats and stir until all the oats are moistened. Transfer the mixture to the pan and press it into an even layer about 2 cm thick, pressing firmly into the corners as well.

  5. Bake

    30 min

Bake for 25–30 minutes at 180 °C (350 °F), until the edges are golden brown and the surface feels firm to the touch.

  6. Cut into bars

    1 hr

Let the slab cool in the pan for at least 1 hour; it will break apart if still warm. Then lift it out using the parchment paper and cut it into 12 bars with a sharp knife.

Tip: Press the mixture into the pan as firmly as possible, using the bottom of a glass, for example, to keep the bars from crumbling. Because they contain banana and apple, store them in a sealed container in the refrigerator. Read more: Spotted bananas: how they differ from unripe ones
