This ham and cheese potato pancake is baked in a sheet pan and makes use of leftover potatoes. Finely grated potatoes are mixed with carrots, shallots, chives, eggs, and a pinch of nutmeg, then spread over a parchment-lined sheet pan. The baked base is spread with herb cream cheese, topped with ham, and sprinkled with grated cheese. It makes a very large portion, best shared among several people, and the whole dish is ready in about 35 minutes.

Instructions
Tip: tap a step to mark it as done.
Gather all the ingredients.
Peel the potatoes and grate them finely. Add the carrots, chives, shallots, eggs, nutmeg, a little salt, and black pepper, and mix well.
Spread the mixture onto a sheet pan lined with parchment paper. Make sure the paper is not torn and covers the entire pan.
Bake for 30 minutes at 180 °C (350 °F), then let the baked pancake cool completely. Spread it with half the cream cheese, arrange the ham on top, and spread with the remaining cream cheese.
Using the parchment paper to help, carefully roll up the pancake along the long side. Sprinkle the roll with grated cheese and bake for another 15 minutes at 180 °C (350 °F). Cut into thin strips and serve.
Tip: Carefully loosen the baked pancake from the parchment while it is still warm, then set it back on the paper. Otherwise, it will stick as it cools and tear when rolled.
