Chai latte is black tea simmered with whole spices, milk and honey, known in India as masala chai. First, simmer cinnamon, cardamom pods, cloves, black peppercorns, star anise and fresh ginger in water for 5 minutes, then add the tea, followed by the milk. Strain the drink to remove the spices, froth until creamy and sprinkle with cinnamon. This recipe makes 2 cups in 15 minutes.

  1. Prepare the spices

    2 min

Gently press the cardamom pods with the flat side of a knife on a cutting board to split them open. Peel the ginger and cut it into thin slices.

  2. Simmer the spices

    5 min

Pour the water into a small saucepan and add the cinnamon stick, cardamom, cloves, black peppercorns, star anise and ginger. Bring to a boil, then cover and simmer gently for 5 minutes, until the water turns brown and smells fragrant with spices.

  3. Add the tea

    3 min

Add the loose-leaf black tea or tea bags and simmer for another 3 minutes. Do not simmer any longer, or the tea will turn bitter.

  4. Pour in the milk

    3 min

Pour in the milk, add the honey and heat, stirring, until bubbles begin to form around the edge. Keep the milk just below a boil so it doesn't boil over.

  5. Strain and froth

    2 min

Strain the drink through a fine-mesh strainer into a pitcher, then froth with a handheld milk frother or whisk for about 30 seconds, until a creamy foam forms on top. Pour into two mugs and sprinkle with a pinch of ground cinnamon.

Tip: For a caffeine-free chai latte, use rooibos or decaffeinated black tea. Rooibos won't turn bitter, so you can simmer it with the spices for 5 minutes.
