Florentine doughnuts are yeast-raised rings topped with butter frosting and sliced almonds after frying. The dough, made with butter and eggs, rises for an hour before being rolled out to a thickness of 1.25 cm and cut into 12 rounds. After making a hole in each round, let them rise for another half hour. Fry them in oil heated to 185 °C (365 °F). Customize the butter, powdered sugar, vanilla and cream frosting as you like, and get the kids involved in decorating.

    Instructions

Tip: tap a step to mark it as done.

    1. For the dough, stir the yeast into the warm water and let stand in a warm place for 5 to 10 minutes. Add the flour, milk, softened butter, egg, sugar and salt, and knead into a firm, sticky dough. Cover with a kitchen towel and let rise for about 1 hour.

    2. Turn the risen dough out onto a floured work surface, roll it out to a thickness of 1.25 cm and cut out 12 rounds. Poke a hole in the center of each with your finger, cover with a kitchen towel and let rise for another 30 to 40 minutes.

    3. Heat the oil in a deep skillet to 185 °C (365 °F) and fry the doughnuts on both sides until golden brown. Transfer to paper towels to drain.

    4. For the frosting, beat the butter, then gradually beat in the sugar in 4 additions until smooth and creamy. Add the vanilla extract and cream, and beat for a few more minutes.

    5. Spread the frosting over the cooled doughnuts and sprinkle with sliced almonds.

Tip: Gather the dough scraps after cutting and let them rest under a kitchen towel for a few minutes so they won't shrink back when rolled out. If the frosting is too stiff, soften it with another teaspoon of cream.
