These Lithuanian potato dumplings with ground pork have a dough made from mashed potatoes and raw grated potatoes with the excess liquid squeezed out. The starch that settles out of the potato liquid is added to the dough along with flour and an egg. Small rounds of dough are filled with a spoonful of seasoned ground pork and shaped into dumplings. Serve them with sour cream or with melted butter, bacon, and sautéed onions.

Tip: tap a step to mark it as done.
- Boil half the potatoes and mash them. Grate the remaining potatoes and squeeze out the excess liquid.
- Combine the mashed and grated potatoes. Add the starch from the potato liquid, the cornstarch, flour, egg, and pepper, and mix thoroughly.
- Shape the dough into small, flat rounds. Place a tablespoon of ground pork in the center of each, fold the dough over the filling, and shape into dumplings.
- Bring a pot of water to a boil, add the dumplings, and boil for 15 minutes.
Tip: Catch the liquid from the grated potatoes in a bowl and let it stand for a few minutes. Carefully pour off the water, then stir the white starch left at the bottom into the dough.
