These quick, no-yeast doughnuts use a batter of quark (farmer's cheese), eggs, flour and sugar, simply mixed in a bowl and dropped by the spoonful into hot oil. You don't need yeast, a rolling pin or a floured work surface, and the doughnuts still turn out soft and fluffy.

The oil needs to be hot, but not too hot, or the doughnuts will brown before they cook through. Dust the finished doughnuts with powdered sugar.

Instructions

Tip: tap a step to mark it as done.

  1. Mix the batter

Place the quark and eggs in a bowl. Add the flour, sugar, vanilla sugar, salt and a little cinnamon to taste, and mix together.

  2. Add the baking soda

Add the baking soda and vinegar, and mix the batter thoroughly until smooth and soft.

  3. Heat the oil

Heat the oil until hot but not smoking, or the doughnuts will burn on the outside while remaining raw inside.

  4. Fry the doughnuts

Dip a tablespoon into the oil, scoop up a scant half tablespoon of batter and drop it into the oil. Turn the doughnuts with a fork as they fry. If they brown too quickly, reduce the heat.

  5. Dust with sugar

Use a slotted spoon to transfer the cooked doughnuts to a paper towel-lined plate, then dust with powdered sugar.

Tip: Mix powdered sugar with an equal amount of cocoa powder to give the doughnuts a chocolate flavor.

Tip: Start heating the oil while mixing the batter so you can fry the doughnuts as soon as you add the baking soda and vinegar. The batter starts rising immediately, and letting it sit will make the doughnuts less fluffy.
