Turkey cutlets with pan gravy are a simple dish made with lean turkey breast, without breading. Pound the slices, dust one side with flour, and sear them, then simmer briefly in broth with onion. The flour on the meat lightly thickens the gravy, and a little butter stirred in at the end adds richness.

Serve with rice, boiled potatoes, or bulgur pilaf.

Instructions

Tip: tap a step to mark it as done.

  1. Prepare the cutlets

Slice the turkey breast across the grain into 8 slices about 1 cm thick. Cover with plastic wrap and gently pound to a thickness of 6–7 mm. Season with salt and pepper and dust one side with flour.

  2. Sear the cutlets

Heat the oil in a large skillet. Place the cutlets flour-side down in the skillet and sear for 2–3 minutes until golden, then turn and cook for 2 minutes on the other side. Transfer to a plate.

  3. Make the gravy

Add the finely chopped onion to the pan drippings and sauté for 3 minutes, stirring occasionally. Pour in the broth and scrape up any browned bits from the bottom with a wooden spoon.

  4. Simmer the cutlets

Return the cutlets to the skillet, cover, and simmer over low heat for 8–10 minutes. The meat must be cooked through, with no pink in the center and clear juices when pierced.

  5. Finish with butter

Transfer the cutlets to a warm plate. Stir the butter into the gravy, simmer for 2 minutes to thicken slightly, and season with salt to taste. Pour the gravy over the cutlets.

Tip: Sift the flour over the cutlets and gently shake off the excess—the thin coating will brown evenly in the pan and thicken the gravy without lumps.
