This pickled cabbage and carrot salad keeps fresh in a jar in the refrigerator for several days. Thinly sliced cabbage is mixed with grated carrots, packed tightly into a large jar, and covered with boiled water, salt, and sugar. After two days, onion and oil are added. Serve it as a side dish with a main course or on its own.

Instructions
Tip: tap a step to mark it as done.
Cut the cabbage into several pieces to make it easier to handle, then slice it into thin strips. The thinner the strips, the juicier the salad will be. Coarsely grate the carrots and use your hands to mix them with the cabbage in a large bowl.
Transfer the vegetables to the jar and pack them down firmly, as the cabbage needs to be tightly packed to release its juices well. Pour in the cooled boiled water and add the salt and sugar. Let the cabbage soak up the liquid. If the water has disappeared after one day, add a little more.
The cabbage should be juicy. Refrigerate it for one more day, then add 1–2 thinly sliced onions and enough oil so that the salad is neither greasy nor dry.
Serve as a side dish with a main course or on its own. It will keep in the refrigerator for several days.
Serve the salad.
Tip: If the onion is very pungent, soak it in cold water for a few minutes after slicing, then drain it for a milder salad.
