Cod with buckwheat and mushrooms makes a filling fish lunch: cook the buckwheat and toss it with button mushrooms sautéed with onion, then sear the cod fillets in butter until golden. Buckwheat's nutty flavor pairs well with white fish.

Instructions

Tip: tap a step to mark it as done.

  1. Buckwheat

    20 min

Rinse the buckwheat, add 400 ml water and half the salt, and cook, covered, for 15 minutes. Let stand for 5 minutes.

  2. Mushrooms

    10 min

Sauté the finely chopped onion in the oil. Add the sliced button mushrooms and cook until their liquid evaporates. Season with salt and toss with the buckwheat and parsley.

  3. Cod

    8 min

Pat the fillets dry and season with salt. Sear in hot butter for 3–4 minutes per side, until the flesh turns white. Drizzle with lemon juice.

  4. Serve

Divide the buckwheat among plates and top with the cod fillets.

Tip: Pat the cod thoroughly dry before searing; otherwise, the butter will splatter and the fish will steam instead of sear.
