Garlic pork cutlets from Liptov, a region in northern Slovakia, are left to marinate overnight in milk with garlic, paprika and onion before cooking. The pounded, salted meat is rubbed with pressed garlic, sprinkled with ground paprika and a little flour, covered with milk and put in the refrigerator. The next day you can coat the cutlets in all-purpose flour and fry them, cook them plain, or sear them quickly and bake them in the oven together with the marinade. The marinade also suits meat for the grill or for roasting and braising.

Instructions
Tip: tap a step to mark it as done.
Day one:
Pound the meat lightly and salt it. Rub it thoroughly on both sides with pressed garlic, sprinkle with the paprika and all-purpose flour (about 2 tablespoons), and cover with milk.
Add the chopped onion, stir, and leave to marinate overnight in the refrigerator.
Day two:
Coat the meat in all-purpose flour and fry it in oil for 3 to 4 minutes on each side until golden and cooked through, or prepare it plain, without a coating.
Tip: you can also sear the cutlets quickly in a pan and then bake them in the oven together with the marinade until the meat is tender.
Tip: Before coating, let the cutlets drip off the milk marinade and wipe off the bits of garlic and onion; in hot oil they would burn and turn bitter.
