Mascarpone is a delicate, creamy fresh cheese from Lombardy that you can make at home with just cream and a teaspoon of lemon juice. The cream is heated over low heat, the lemon juice thickens it, and the mixture then rests in the refrigerator. The hands-on work takes about ten minutes. Use homemade mascarpone in cream fillings and tiramisu, sweetened with honey to serve with fruit, or as a ravioli filling.

  2. Allow about 10 minutes for the preparation, then let the mascarpone rest in the refrigerator for at least one night. Use it the next day, for example, as a filling for crepes or a topping for pancakes.
  3. Pour the cream into a saucepan and heat over low heat.

  4. Gradually heat the cream to 90°C (194°F) and maintain that temperature. After 3 minutes, add the lemon juice and cook for another 3 minutes.

  5. Remove the saucepan from the heat and let the mixture cool to room temperature.
  6. Line a strainer with a kitchen towel, set it over a pot, and pour in the cooled mixture. Let the whey drain into the pot overnight.
  7. Use the mascarpone as soon as the next day. Store it in a sealed container in the refrigerator for several days.

Tip: After you add the lemon juice, the cream will only thicken enough to coat a spoon—it will not separate into curds like milk does when making quark, a fresh curd cheese. It will become thick and creamy only after cooling and draining.
