Homemade sesame crescent rolls are bread rolls you can bake with everyday ingredients instead of buying them at the store. Let the dough made with flour, milk, oil, and a fresh yeast starter rise, then divide it into balls, roll each one out, and roll it up into a crescent-shaped roll. Sprinkle with sesame or caraway seeds and bake for 10 to 12 minutes at 220 °C (425 °F). One batch makes approximately 35 to 40 rolls.

Instructions

Tip: tap a step to mark it as done.

  1. Warm 200 ml of the milk, add a heaping tablespoon of sugar, and let it dissolve. Add 2 cubes of fresh yeast and let the mixture become foamy. Sift the flour into a large bowl, then add the oil, remaining milk, salt, and yeast mixture.

  2. Knead the mixture by hand into a dough and let it rise in a warm place, such as outside in the sunshine or in an oven set to 30 °C (86 °F). Pinch off small pieces of the risen dough and shape them into balls between your palms, as shown in the picture. You should have approximately 35–40 balls.

  3. Roll out each ball, then roll it up into a crescent-shaped bread roll, as shown in the picture below.

  4. Brush a baking sheet with oil, line it with parchment paper, and lightly brush the paper with oil as well. Arrange the rolls on the sheet, let them rise for a few more minutes, then brush with oil or beaten egg and sprinkle with sesame or caraway seeds to taste.

Bake in an oven preheated to 220 °C (425 °F) for approximately 10–12 minutes. Cover the baked rolls with a damp kitchen towel for a few minutes to keep them soft the next day.

Tip: Keep the dough balls covered with a kitchen towel while they wait to be rolled out so they do not dry out. Place the shaped rolls seam-side down on the baking sheet so they do not unroll during baking.
