Kaiser rolls are round homemade rolls made with semi-coarse wheat flour, all-purpose flour, and dry yeast, with dough that can be kneaded in a bread machine. The risen dough is divided into eight pieces and given its characteristic slashes. After a short rise, the rolls are brushed with egg and sprinkled with sesame, poppy, or caraway seeds. They bake for 15–20 minutes at 200 °C (400 °F). This recipe comes from Maťka and is suitable for breakfast or a midmorning snack.

Instructions

Tip: tap a step to mark it as done.

  1. Place the dough ingredients in the bread machine and let it knead the dough and allow it to rise. Divide the dough into 8 pieces and slash the top of each one.
  2. Let the rolls rise for 10 minutes. Skip this step if you are in a hurry.
  3. Brush the rolls with egg and sprinkle with sesame, poppy, or caraway seeds. Bake at 200 °C (400 °F) for about 15–20 minutes.

Tip: Let the slashed rolls rise cut-side down on a floured board, then turn them over onto the baking sheet. This keeps the cuts from closing so they open nicely in the oven.
