Kuracia tlačenka, a Slovak chicken aspic with walnuts and garlic, is a cold appetizer made with chicken simmered in its own juices and set in gelatin-enriched broth. The chicken simmers without oil for about 35–45 minutes, then is taken off the bones and mixed with toasted walnuts and crushed garlic. This aspic is inexpensive to make, and you know exactly what goes into it. Serve chilled with a slice of bread.

Instructions

Tip: tap a step to mark it as done.

  1. Place the chicken in a heavy-bottomed pot or skillet and add a little water; do not add oil. Season lightly with salt and pepper, cover, and simmer over low heat in its own juices for 35–45 minutes.
  2. Dissolve the gelatin in warm water according to the package instructions. Pour the cooking broth into a bowl, let the chicken cool, and remove the meat from the bones.
  3. Mix the dissolved gelatin with the broth. Lightly toast the walnuts in a dry skillet if desired, then add them to the chicken along with the crushed garlic. Season with salt and pepper, pour in the broth and gelatin mixture, and let cool.
  4. Cut the neck off a clean plastic bottle and fill it with the cooled mixture. Refrigerate for several hours until the aspic is completely set. Carefully cut open the bottle to remove the set aspic.
  5. Tip: Add sautéed onion, carrots, peas, or corn to the aspic if desired. Substitute beef or pork for the chicken, allowing a little more time for simmering.

Tip: Skim off the fat that collects on the surface of the broth with a spoon before mixing in the gelatin for a clearer aspic that is not greasy.
