No-bake Horalky truffles are a three-ingredient Christmas treat: a little cream cheese binds the crushed Horalky peanut-filled wafer bars, and the balls are coated in milk chocolate. They taste like chocolate-covered Horalky, but with a soft, creamy center. The wafers provide both the sweetness and peanut flavor, so no sugar or butter is added to the mixture. Coarsely chopped Horalky on top adds a crunchy finish. Unlike wafer truffles with rum and coconut, these contain no alcohol, so children can enjoy them too.

Instructions

Tip: tap a step to mark it as done.

  1. Crush the Horalky wafers

    5 min

Unwrap the Horalky bars. Reserve one for the topping and chop it coarsely with a knife. Break the remaining five into a food processor or blender and process into fine crumbs. If you do not have a blender, place them in a sturdy bag and crush with a rolling pin.

  2. Mix the truffle mixture

    5 min

Add 2 tbsp cream cheese to the crumbs, stir with a spoon, then press the mixture together with your fingers. If it crumbles and does not hold together, mix in another tablespoon of cream cheese. The finished mixture should be thick and hold its shape.

  3. Shape the truffles

    30 min

Scoop out portions with a small spoon and roll them between your palms into walnut-sized balls. Place on a plate lined with parchment paper and refrigerate for 20 minutes to firm up so they do not fall apart in the chocolate.

  4. Melt the chocolate

    5 min

Break the chocolate into a bowl and melt over a pot of hot water, or microwave in 20-second intervals, stirring after each interval. Overheated chocolate becomes thick and grainy, so remove it from the heat as soon as it melts.

  5. Coat the truffles

    10 min

Place the truffles in the chocolate one at a time, turn with a fork, and lift out. Let the excess chocolate drip off, then return them to the parchment paper. Sprinkle with the chopped Horalky while the chocolate is still soft.

  6. Let the chocolate set

    30 min

Refrigerate the truffles for half an hour, until the chocolate sets. Serve in paper candy cups. Because they contain cream cheese, store them in a sealed container in the refrigerator and eat within three days.

Tip: If the mixture sticks to your palms, refrigerate it for 10 minutes. For more variety on the serving plate, coat some of the truffles in white chocolate and sprinkle with chopped peanuts.
