These no-bake wafer rolls with cocoa cookie filling are a sweet treat for a holiday platter or alongside your everyday coffee. Cook the filling with milk, sugar, cocoa powder, vanilla sugar, and rum flavoring, then stir in butter, finely ground cookies, and crushed cookies. Spread the filling while still hot onto wafer sheets laid on a damp kitchen towel. After a short wait, the wafers soften enough to roll up. You can replace some of the cookies with nuts.

Instructions
Tip: tap a step to mark it as done.
Dampen a kitchen towel and lay the wafer sheets on it.
Bring the milk and sugar to a boil, then add the cocoa powder, vanilla sugar, and rum flavoring. Remove from the heat, stir in the butter, and add both the finely ground and crushed cookies.
Mix the filling and spread it onto the wafer sheets while still hot. Wait 2–3 minutes for the wafers to soften, then roll up both sheets. Let cool completely.
This makes two rolls. Use the damp towel only at the beginning; do not leave the rolls wrapped in it.
Tip: Add nuts to the filling if desired, reducing the amount of cookies by the same amount.
Tip: Place each roll seam-side down and let it cool without moving it so the seam seals and the roll does not unravel when sliced.
