Čierni princovia, or “black princes,” are no-bake treats made with round sponge cookies topped with thick egg-white foam and dipped in chocolate. Beat the egg whites with superfine sugar and Vitacit, a citric acid-based powder, over a water bath for about 20 minutes. The water must not be too hot, or the egg whites will cook. Pipe the foam onto the cookies, let them stand for an hour, then dip them in melted chocolate. The base takes just four ingredients.

Instructions

Tip: tap a step to mark it as done.

  1. Egg-white foam:

Beat the egg whites with the sugar and Vitacit using an electric mixer over a water bath for about 20 minutes. Do not let the water get too hot, or the egg whites will cook. Transfer the finished foam to a piping bag and pipe it onto the sponge cookies.

  2. Let the cookies stand for an hour, then dip them in melted chocolate and let set.

Tip: Let the melted chocolate cool slightly, then dip the cookies into it upside down for just a moment. Hot chocolate would soften the egg-white foam.
