Serbian-style pork chops with peppers and tomatoes are a classic dish of lightly pounded pork loin slices braised in a vegetable sauce. The meat is seared on both sides, then onion, bell pepper, tomatoes, and a little tomato paste are sautéed in the pan drippings. The sauce is thickened by the vegetables themselves, without flour. Use fresh vegetables in summer or preserved lečo, a pepper and tomato mixture, in winter. This dish is most often served with rice.

Instructions

Tip: tap a step to mark it as done.

  1. Use bone-in pork loin chops if desired. Lightly pound the pork slices, season with some of the salt, and sear in the oil on one side.
  2. Turn the meat over and sear the other side.
  3. Set the seared meat aside and sauté the chopped onion, bell pepper, and tomatoes in the pan drippings. Add a little tomato paste and cook everything together briefly.
  4. Return the meat to the pot, pour in some of the broth, cover, and braise until tender, adding more broth as needed. Taste the sauce at the end and add the remaining salt to taste—you probably will not need all of it if the broth was salted. Serve with rice.

Tip: Make two or three cuts in the fat along the edges of the pork loin slices to keep them from curling during searing and help them brown evenly.
