These soft poppy seed crescent rolls are small yeast rolls made with milk and oil, which keep them tender and moist. After rising, the dough is divided into small balls and shaped into crescents, brushed with egg yolk, and sprinkled with ground poppy seeds. You can also fill them with thick fruit preserves or quark, a fresh curd cheese. They bake in just 15 minutes at 190 °C (375 °F) and are perfect for breakfast or a family celebration.

Instructions

Tip: tap a step to mark it as done.

  1. Pour the milk into a pot, add the oil, sugar, egg whites, and yeast, and mix thoroughly. Add half the sifted flour and mix, then add the rest and work into a soft, sticky dough. Transfer the dough to a floured work surface and knead well, working in a little more flour as needed.

  2. Shape the dough into a smooth ball and place it in an oiled bowl. Brush the surface of the dough with oil as well, cover the bowl with plastic wrap, and let rise in a warm place until doubled in size.

  3. Remove the risen dough from the bowl and divide it in half. Divide one half into 4 balls, then cut each in half again to make 8 small balls from half the dough. Keep the balls you are not working with covered so they do not dry out.

  4. Roll out each ball, place your choice of filling along one edge, and make cuts in the opposite edge with a knife. Roll up into a crescent shape.

  5. Place the crescent rolls on a baking sheet lined with parchment paper and brush with egg yolk. Bake at 190 °C (375 °F) until golden, about 15 minutes.

Tip: Prepare the poppy seed filling with hot milk and sugar to keep it moist; dry ground poppy seeds would spill out of the dough as you roll up the crescents.
