Banana caramel bars with cinnamon cake are a sheet-pan dessert that makes a change from the usual Bundt cakes, gingerbread, and strudels. Banana slices are arranged in the pan first, then covered with cinnamon batter and baked at 190 °C (375 °F) until golden. The cream filling starts with homemade caramel: sugar is caramelized, combined with heavy whipping cream, and enriched with butter.

More bananas and chocolate complete the bars. Even less experienced bakers can manage the preparation.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the eggs with the sugar until foamy. Gradually add the oil and the flour mixed with the baking powder and cinnamon.

  2. Line a sheet pan with parchment paper and arrange the sliced banana on the bottom. Spread the batter over the banana slices and bake at 190 °C (375 °F) until golden.

  3. Caramelize 300 g of sugar in a saucepan. Pour the heavy whipping cream into the caramel and stir constantly until combined. Remove from the heat, stir the butter into the warm caramel until melted, and let cool.

  4. Mix the sour cream with the milk, then stir in the caramel a little at a time. If the filling would be too thin, omit the milk.

  5. Spread 1/3 of the filling over the baked cake, arrange the bananas on top, whole or sliced, and cover them with the remaining filling.

  6. Decorate the top with grated chocolate or caramel dipping sauce.

Tip: Warm the cream before adding it to the caramel, as cold cream would make the caramel seize into hard lumps. Pour it in slowly and stand back, as the hot caramel will bubble up vigorously and splatter.
