This cocoa poke cake is a fluffy cocoa sponge cake poked with holes while still hot and filled with hot vanilla pudding. A layer of chocolate pudding goes on top, so each slice has little pockets of vanilla filling.

The cake and both pudding layers use everyday ingredients and pudding mix. Once cool, the cake cuts neatly into squares.

Instructions

Tip: tap a step to mark it as done.

  1. Beat the batter

Separate the eggs. Beat the yolks with the powdered sugar and vanilla sugar until light and fluffy. Pour in the oil and milk and beat for several more minutes. Gradually mix in the flour and baking powder, followed by the cocoa powder and instant cocoa drink mix.

  2. Fold in the egg whites and bake

Beat the egg whites until stiff peaks form, then gently fold them into the batter. Pour the batter into a greased and floured medium baking pan and bake at 180 °C (350 °F) for 20–25 minutes.

  3. Poke the holes

Immediately poke deep holes in the hot cake with the handle of a wooden spoon.

  4. Fill with vanilla pudding

Cook a thick pudding using 900 ml milk, 6 tbsp sugar, and 2 packets vanilla pudding mix. Stir the butter into the hot pudding and whisk until smooth. Immediately spread the hot pudding over the cake, making sure it fills all the holes.

  5. Add the chocolate layer

In the same way, cook the chocolate pudding using 800 ml milk, 6 tbsp sugar, and 2 packets pudding mix. Stir in the butter and pour over the vanilla pudding layer. Sprinkle with chocolate flakes if desired. Let the cake cool in the refrigerator, then cut into squares.

Tip: Wait until the vanilla layer has set slightly on the surface before pouring on the chocolate pudding, and pour it over the back of a spoon. This keeps the layers from mixing and the vanilla pockets light in color when sliced.
