These flourless quark rolls are made with just four ingredients: low-fat quark, eggs, baking powder, and seeds for topping. Quark, a fresh cultured cheese, is mixed with egg yolks, salt, and pepper, then beaten egg whites are gently folded in to lighten the mixture. Spoon the batter onto a baking sheet in rounds, sprinkle with caraway or other seeds, and bake for 30 to 35 minutes at 150 °C (300 °F) until golden. You can also add herbs to the batter to taste.

Instructions
Tip: tap a step to mark it as done.
Mix the quark with the egg yolks, add the baking powder, and season with salt and pepper. In a separate bowl, beat the egg whites until stiff, then fold them into the quark mixture. Mix thoroughly and add herbs to taste.
Preheat the oven to 150 °C (300 °F). Spoon the batter onto a baking sheet lined with parchment paper, shaping it into rounds. Sprinkle with caraway or other seeds if desired. Bake for 30 to 35 minutes until golden.
Tip: Wrap wet quark in a clean kitchen towel and squeeze out the whey; otherwise, the rounds will spread on the baking sheet. Fold in the beaten egg whites gently with a spatula, using a circular motion from the bottom up to keep them from deflating.
