These flourless bread rounds are made with just quark (farmer's cheese), eggs, baking powder, and seasonings and can replace regular bread rolls. Mix the quark with egg yolks, baking powder, salt, and pepper, then gently fold in whipped egg whites. Flavor the batter with rosemary or herbes de Provence. Spoon rounds of batter onto a baking sheet and bake for 30 to 35 minutes at 150°C (300°F).

Instructions
Tip: tap a step to mark it as done.
Mix the quark with the egg yolks in a bowl. Add the baking powder and season with salt and pepper.
In another bowl, beat the egg whites until stiff and fold them into the quark mixture. Mix thoroughly and add herbs, such as rosemary or herbes de Provence.
Preheat the oven to 150°C (300°F) and line a baking sheet with parchment paper. Spoon the batter onto the sheet in rounds.
Sprinkle the rounds with caraway seeds or coarse salt. Bake for 30–35 minutes, until golden brown.
Tip: Turn on the oven before whipping the egg whites so the batter does not deflate while waiting for the oven to heat up. Store the rounds in the refrigerator, since they are made with quark and eggs.
