Instructions

Tip: tap a step to mark it as done.

  1. Marinate

    30 min

Mix the oil with the crushed garlic, thyme, and black pepper. Rub the mixture over the pork chops and let stand at room temperature for 30 minutes.

  2. Make the herb butter

    5 min

Mix the butter with the parsley, crushed garlic, and a pinch of salt. Shape into a log and refrigerate for 20 minutes to firm up.

  3. Grill the chops

    12 min

Heat a grill pan until very hot. Season the chops with salt and cook for 5–6 minutes per side, until cooked through and the juices near the bone run clear.

  4. Serve

    3 min

Let the meat rest for 3 minutes, then place a slice of herb butter on each chop. Serve with potatoes or vegetables.

Tip: Score the fat along the edge of each chop at intervals of about 2 cm; otherwise, it will contract during cooking and cause the chop to curl.
