Langos (langoše in Slovak) with sour cream and grated cheese is a classic that should turn out big, round and nicely puffed up. A sponge is made from yeast, sugar, a little flour and water and then combined with the rest of the ingredients into a dough. The dough rests for 40 minutes, then the oil is worked in and it stands for another ten minutes. The langos are fried in well-heated oil and served spread with sour cream and topped with hard cheese.

Mix the yeast with 1/2 teaspoon of the sugar, add a teaspoon of flour and a little water. Let the mixture rest for 10 minutes.
Mix the remaining ingredients except the oil, gradually add the sponge, and knead the dough. Cover it with plastic wrap and let it rest for 40 minutes.
Work the oil into the dough, wrap it in plastic wrap again, and let it rest on the board for 10 minutes.
Divide the dough into 6 pieces, shape them into balls, and wrap each one in plastic wrap. Unwrap them one at a time and roll each out into a flat round.
Fry the langos in very hot oil on both sides until golden. Spread the finished langos with sour cream and sprinkle with cheese.
Tip: Cover the rolled-out flatbreads with a kitchen towel and let them rest for a few minutes; they puff up more nicely in the oil afterward. Lay them into the oil away from you so the hot oil does not splash onto your hand.
